What is Seitan:

Seitan is a dough made with vital wheat gluten, a high-protein wheat flour, and liquid. Seitan becomes surprisingly similar to the look and texture of meat when cooked, and extremely verstile making it a popular meat substitute. Seitan is also very high in protein.

Prepared seitan can be found in the refrigerated section of most health food stores, usually in a tub similar to the way tofu is sold, or sometimes in sealed plastic inside a box, but always in the refrigerated section. Seitan can also be prepared by hand using vital wheat gluten.

It’s simple to make and more cost beneficial that way! Just follow along with the instructions below.

How to Make It:

Ingredients:

  • 2 cups vital wheat gluten
  • 1/2 cup nutritional yeast
  • 2 tsp. garlic powder
  • 5 cups low-sodium vegetable broth, divided
  • 2 Tbs. bragg liquid amino
  • 1/2 small white onion, diced
  • 1 clove garlic, crushed

Instructions:

  1. Whisk together 2 cups wheat gluten, yeast, and garlic powder in large bowl. Then add 1 1/4 cup broth and 2 tbsp bragg until dough forms. (add more broth if needed)
  2. Knead dough in bowl until elastic. Shape into 2 loaves.
  3. Place loaves in large saucepan, and add remaining broth, onion, garlic, and enough water to cover seitan
  4. Cover, and bring to a boil over medium heat. Reduce heat to medium-low, and simmer 30 to 45 minutes, or until seitan is firm. Remove from heat, and cool in broth
  5. Enjoy!
