Holiday season is here! I can’t tell you how many times I get asked “what does your vegan family eat at Thanksgiving?!” The answer is: eating vegan at Thanksgiving is EASY! Although we have many thoughtful friends and neighbors who intentionally plan to serve a vegan dish or two, I would never enter a party empty handed. I’ve started to plan our vegan Thanksgiving menu along with dishes to bring to various potluck events this month. This recipe is one of my go-to salads; it is so easy to make and even more importantly, it’s tasty! Requiring only a few simple ingredients you can pull it together in just a few minutes and all the colors make it welcome on any holiday table.
Spinach Mandarin Thanksgiving Salad Recipe!
SALAD
– Spinach
– Dole Package Foods Mandarin Oranges
– 1 cup pecans (if toasting the pecans for a candied holiday feel)
– 1 tbsp vegan butter
– 2 tsp sugar of choice (I used coconut sugar but you can sub for brown sugar)
DRESSING
– Leftover mandarin juice from the oranges
– 1 clove minced garlic
– 2 tbsp apple cider vinegar
– 1/2 of a lemon, juiced
